Almond Chocolate Chip Cookies

9-11 minutes to cook

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1-7 oz box Odense Almond Paste, grated
  • 1 1/2 sticks (12 tablespoons) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup firmly packed light brown sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • Optional: 1 cup sliced almonds, toasted
1. Preheat oven to 375°F. Line baking sheets with parchment paper or leave ungreased.
2. Whisk flour, baking soda and salt in a small bowl. Set aside.
3. Beat Almond Paste, butter, granulated sugar and brown sugar in mixing bowl until combined. Add eggs one at a time, beating well between each. Mix in vanilla extract.
4. Add flour mixture, chocolate chips and almonds. Beat until well combined. Drop by rounded tablespoons onto baking sheet.
5. Bake 9-11 minutes or until golden. Cool on baking sheet until cookies are set and remove to wire racks to cool completely.
