Almond Banana Bread

Ingredients

  1. 1/2 cup sliced almonds
  2. 1-7 oz box Odense Almond Paste (grated using large hole side of a box grater)
  3. 2 cups mashed bananas (4 bananas)
  4. 1 1/4 cups sugar
  5. 1/2 cup canola oil
  6. 1/2 stick (4 tablespoons) unsalted butter, softened
  7. 2 eggs, room temperature
  8. 2 cups flour
  9. 1 teaspoon baking soda
  10. 1/2 teaspoon salt
Odense Almond Paste makes this fabulous banana bread extra rich and moist.

Time

15 minutes to assemble
90 minutes to cook
Total time: 1 hour and 45 minutes

Yield

1-9 x 5 inch loaf pan

Directions

  1. Preheat oven to 350°F. Spray loaf pan with nonstick cooking spray.
  2. In a small dry skillet, toast almonds until slightly golden. Remove to a plate to cool.
  3. Using an electric mixer, beat Almond Paste (grated using large hole side of a box grater), bananas, sugar, oil, butter and eggs until smooth.
  4. Whisk flour, baking soda and salt together. Add to banana mixture with almonds.
  5. Beat until incorporated and pour into prepared pan.
  6. Bake 1 hour and 30 minutes or until toothpick inserted in middle comes out clean.
  7. Loosely tent bread with foil if browning too quickly.
  8. Cool bread in pan on wire rack for 15 minutes. Unmold onto rack and cool completely before slicing.
