Almond Shortcake Stars

Split these stars with a serrated knife and fill with whipped cream, strawberries and blueberries for a July 4th dessert.

INGREDIENTS

1 stick (4 oz) unsalted butter, COLD 2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1-7 oz box Odense Almond Paste, grated 1/4 cup heavy cream

TOOLS & EQUIPMENT

Baking sheet
Food processor fitted with metal blade
Wire strainer/sifter
Rolling pin
Star shaped cookie cutter

DIRECTIONS

  1. Preheat oven to 400° F.
  2. Grease cookie sheet, or line with parchment paper.
  3. Sift flour, baking powder and salt into food processor fitted with metal blade.
  4. Cut the cold butter into half inch pieces.
  5. Add the butter to flour mixture. Pulse a few times to get a crumbly texture. Do not overmix.
  6. Add the grated Almond Paste. Pulse several times to get a granular texture.
  7. Add the heavy cream. Pulse until the mixture starts to come together.
  8. Turn out onto a lightly floured work surface. Knead for one minute.
  9. Dust your rolling pin with flour. Roll to a 3/4 inch thickness.
  10. Dipping the cookie cutter in flour to prevent sticking, cut out stars and place on your greased cookie sheet.
  11. Bake 13-15 minutes or until golden.
